Pre-Chore Meal Prep - Beef Stroganoff
This is a super quick and easy recipe and it made my pre-chore meal prep rotation this week. I made the sauce earlier in the day and refrigerated until we got home from chores and were ready to eat. I put the skillet back on the stove over low heat and stirred occasionally to heat it back up. I boiled noodles according to the box instructions and mixed them in with the sauce. Served with steamed veggies.
INGREDIENTS
2-3 TBS butter
16 oz of mushrooms. (I prefer fresh, but canned works too)
1 lb of ground beef
1/4 c flour
2 c beef broth
1 TBS Worcestershire
1 teaspoon onion powder
1/2 cup sour cream salt and pepper to taste
INSTRUCTIONS:
Add butter and mushrooms to a skillet and sauté. Once done, remove from skillet and set aside.
Add ground beef to the same skillet and brown it. Sprinkle flour over browned ground beef and give it a quick stir.
Over low heat, stir in beef broth, Worcestershire and seasonings. Stir occasionally and allow the sauce to thicken.
Mix in sour cream and add mushrooms to the mixture. If the sauce is too thick, add milk. If the sauce is too thin, add more flour. Serve over noodles.
