Make yummy egg roll in a bowl with me for another pre-chore meal prep! Except, this time we’re making it after chores. Say whaaat? Trust me, it’s that quick + easy to make that you can quickly throw it together after chores are done, or after whatever else you have going on. You can get this on the table in less than 20 minutes. 

Just make sure you take your burger out to thaw that morning 😉

INGREDIENTS

  • 1 pound ground beef or pork
  • 1 teaspoon minced garlic
  • 14 ounces shredded cabbage or coleslaw mix
  • 1/4 cup low-sodium soy sauce
  • 1 teaspoon ground ginger
  • 2 teaspoons sriracha
  • 1 whole egg
  • 1 tablespoon sesame oil
  • 2 tablespoons sliced green onions

INSTRUCTIONS:

  1. In a large skillet, brown the beef or pork until no longer pink. Add the garlic and sauté until desired tenderness.
  2. Make a well in the center of the skillet and add the egg. Scramble until done.
  3. Serve immediately and sprinkle with green onions. Add additional soy sauce and sriracha if desired.
