Easy Bacon Jam Cheeseburgers
Easy bacon jam cheeseburgers are a go to post-chore meal as soon as the weather warms up. Honestly, there’s not a much better summer meal than a juicy cheeseburger and fresh salad.
Friends, I want you to know that making a nice meal after busy days doesn’t have to be difficult. It just takes a little bit of planning. Making things ahead of time and using convenience foods (yes – there’s nothing wrong with these!) makes dinnertime easier.
What I did to make this meal ahead of time:
- Pre make the burger patties
- Make the bacon jam
With this meal I made the bacon jam before chores, pattied the burgers and then used a Fresh Express salad kit to make our delicious dinner quickly. The Fresh Express salad kits are super convenient because they have all the of ingredients you need for your salad in one bag. To assemble, all you have to do is empty out the salad into a bowl, top with the salad toppings included and mix in the dressing.
When we make this, I handle the prep before chores and mixing the salad and Tom handles the grilling. Also – if I’m going to be honest, Tom always under-cheeses the burgers, so I recommend adding extra cheese to make it even better. And if you’re Tom reading this, please add more cheese 😉
Use the recipe below for the Bacon Jam! Then, when it’s dinnertime:
- Grill burger Patties + top with cheese of choice after flipping the burger. (I used sharp cheddar but Gouda would be good too)
- Toast the buns in butter.
- Mix salad kit Assemble the bacon jam cheeseburger by topping the cheeseburger with bacon jam and arugula.
Serve + enjoy!
INGREDIENTS
1 pound bacon
1/2 white onion, chopped
1/3 cup dark brown sugar
1/2 cup apple cider vinegar
INSTRUCTIONS:
Cook the bacon in a large nonstick skillet over medium-high heat, stirring occasionally, until browned and crisp.
Allow to cool, then chop the bacon.
In the same pan with the bacon drippings, add the onions and cool until slightly softened. Add the brown sugar + vinegar and bring to a simmer.
Reduce the heat to low and cook until the liquid is absorbed and the mixture has thickened to a jam-like consistency, about 20 minutes. Stir in the bacon; remove from the heat.
